
Oatmeal Pancakes
-½ cup rolled oats
-1 tablespoon ground flaxseed
-5 tablespoons water or unsweetened plant milk
-½ teaspoon baking powder
-1 teaspoon vanilla extra
-¼ teaspoon ground cinnamon
-1 large ripe banana
-Coconut oil, avocado oil or nondairy butter for greasing the pan or skillet
The recipe books says this makes 8 pancakes, keep in mind the book I found this in is for baby led weaning, so it's baby/toddler size.
Recipe from The Plant-based baby and toddler recipe book. Aka Plant-Based Juniors. I usually quadruple the recipe. You can always freeze what's uneaten! I also often substitute the oats for buckwheat flour, or will use a combination of the two.
Can top with maple syrup, nut or seed butter, fresh jam and hemp seeds for additional nutrients and protein!!
