1 cup brown rice
1/2 can lentils
1/2 can black beans
1/2 cup corn
1/2 onion diced
2 cloves garlic
seasonings:
cumin
turmeric
cracked black pepper
smoked paprika
top with:
cilantro
pickled jalapenos
boil 1 1/2 cups of water, add rice. Cover, lower heat to simmer. Sit for 15 minutes. Fluff with a fork. Cover until all water is absorbed (can remove from heat). Do not open the lid until ready to fluff!!
In a pan, add onion and garlic saute until fragrant.
Add lentils, beans, corn and any other desired vegetable.
Stir occasionally, simmering for 3-5 minutes.
Combine everything, top with desired toppings and enjoy!
