Dish
1 box Pad Thai noodles
broccoli
carrot
red bell pepper
purple onion
mushrooms
(veggies of choice)
1/2 block of tofu (pressed/drained)
Optional toppings
cilantro
green onion
chopped peanuts
fresh jalapenos
Peanut sauce
3/4 cup peanut butter
1 tbsp maple syrup/molasses/brown sugar
1 tbsp liquid aminos/coconut aminos
garlic powder to taste
chili flakes to taste
hot water as needed
1 tbsp lime juice
Begin with cooking tofu;
warm a pan with 1 tbsp of coconut oil
cube or square tofu
cook until lightly browned on all sides (let sit each side 2-3 mins then flip)
Cook noodles according to the package.
While noodles prepare, julienne or dice veggies (to preference).
Saute veggies with a few tsp of water (oil if preferred; coconut, sesame..)
Cover veggies let sit for a few minutes, to avoid over cooking.
Peanut sauce
Combine all ingredients, start with 1 tbsp of water and add more as needed. You want a nice consistency, one that's not too liquidy.
Once noodles are prepared, toss with peanut sauce, veggies and tofu, top with toppings of choice and enjoy!
