Don't judge the picture! I had an extra large sheet pan so it came out looking like a disfigured football, but the taste was there! Crunchy and amazing.
I made mine with homemade tortillas, homemade sour cream and homemade no-cheese-cheese sauce! One can either go the homemade route for all ingredients, or sub for store bought faux ones. Either way, yum yum! I did double the beans as we love beans/protein in our home; I used black and kidney beans, one could also use lentils and add hemp seeds for additional protein and nutrients.

"No-cheese cheese sauce; in a food processor combine one cup each of coarsely chopped onion, red bell pepper, and nutritional yeast; 3 tablespoon raw cashews; and 1 tablespoon tahini (optional). Cover and blend until smooth and creamy, adding up to 1/2 cup of water as needed to reach a pouring consistency" #forksoverknives (comes from the chile mac and cheese recipe)
