Ingredients:
-Rice
-Veggies of choice
-1 tbsp sugar (or date/maple syrup)
-2-3 tbsp of Thai Kitchen curry paste
-1 can coconut milk (ethically sourced)
Directions
-Prepare rice accordingly
-Chop vegetables
-Simmer coconut milk, sugar + curry paste or 3 minutes
-Add veggies bring to boil, reduce heat and cover.
Let simmer for 5 minutes.
-Serve over rice
